Rack of Lamb

Alma Alcocer-Thomas, Jeffrey's (1204 West Lynn, 477-5584)

What could be better for fall than a succulent rack of lamb, cooked barely medium rare and placed in a pool of cranberry chipotle sauce with a melange of tart, sweet, smoky, and hot flavors? Jeffrey's chef de cuisine Alma Alcocer-Thomas pairs the elegant lamb with a delicate corn flan; it's one of her most popular menu items this season. Chef Alma is currently collaborating with her mentor, Jeffrey's executive chef David Garrido, on a cookbook for TenSpeed Press.
